  •  Preheat oven to 375°F.  Coat a large baking sheet with a scant coating of Ahuacatlan Avocado oil.
  •  Drain and rinse chickpeas.  Add chickpeas, Ahuacatlan Avocado Oil, lemon juice, red onion, parsley, cilantro, garlic, cumin, coriander, salt and pepper to a food processor. Process until smooth, about 1 minute.
  • Scoop out about 2 tablespoons of the mixture at a time. Shape the falafel into small patties and arrange on oiled baking sheet.
  • Bake for 12-15 minutes, then remove the falafel from the oven and carefully flip each one. Return the pans to the oven for another 12-15 minutes.  Falafel should be lightly browned on both sides

Avocado Basil Hummus

  • Add all ingredients to food processor.  Blend until smooth.  Season to taste.

Zucchini Flour Quesadillas

  • In a bowl, add the corn and all purpose flours, a drizzle of Ahuacatlan oil natural, a drizzle of water, salt to taste and the baking powder. Knead with your hands, and form round flat circles with your palms. Reserve
  • In a sauce pan, add a little bit of Ahuacatlan avocado oil, and sauté the onion, garlic, zucchini flower and epazote, add salt to taste. Cook for 5 minutes and reserve.
  • Add the zucchini flower filling to each tortillas and fold them in half pressing them together on the edges.
  • In a frying pan, add a good amount of Ahuacatlan avocado oil for frying. Fry the quesadillas one or two at a time, remove when they are golden brown, and place them over a paper towel to absorb the excess of oil.
  • Serve with lettuce, sour cream, queso fresco and salsa.

Chipotle Rice

  • In a food processor, place chipotle chiles in adobo, onion, garlic, chicken stock, tomato and salt. Process until puree.
  • In a medium size pan, heat up enough Ahuacatlan chipotle and sauté the rice, stiring occasionally.
  • Once the rice is golden brown, remove the excess of oil and add the tomato puree. Add the dried chipotle, corn, peas and carrots. Bring to a boil and simmer during 20-30 minutes until the liquid has reduced completely. Do not stir too much.
  • Turn off and rest for 10 minutes before serving.

Puff Pastry Ham and Cheese Croissants

  • Preheat the oven to 350°F.
  • In a large bowl, mix together cream cheese with scallions, and season with salt and pepper.
  • In a flat kitchen surface, spread the flour, extend the puff pastry until it reaches a thickness of one finger. Cut it in triangles of 4×6”.
  • Take a triangle and add the cream cheese mixture, the slice of ham and the shredded cheddar. Roll the croissant starting on the wider end. Do the same for the rest of the triangles.
  • Lay them out on a lined baking sheet.
  • Varnish the top of the croissant with egg wash. Repeat with the rest of the croissants.
  • Bake for 15 minutes.

Potato Croquettes

  • With your hands, form small balls and insert a small cube of mozzarella cheese in the center.
  • Place the egg mixture, the flour and the breadcrumbs in three separate bowls.
  • Take each ball and pass them through the egg, then the flour and the breadcrumbs.
  • In a sauté pan, heat up a good amount of Ahuacatlan oil. Fry each ball for about 5 minutes until they are golden brown.

Chipotle Tuna Empanadas

  • In a large bowl, mix the tuna, tomato puree, onion and season with salt and pepper to taste. Reserve in the refrigerator.
  • To make the dough, combine flour, sugar, Ahuacatlan Oil Garlic and water. Work the dough until it’s soft. Let rest for 20 minutes.
  • Add some flour to the surface of a table and spread the dough. With a cookie cutter, cut circles of 4”.
  • Add one or 2 spoonful’s of the tuna mixture to the center of each empanada. Fold in half and close the empanada by pressing the edge with the hands or with a fork.
  • In a sauté or frying pan, add the Ahuacaltan Chipotle and heat up. When hot, fry the empanadas one at a time for about 10 minutes until golden brown.
  • Drain each over a paper towel to remove excess and serve.

Bacon egg rolls

  • In a sauce pan, sautee the onion until transluscent
  • Add the bacon and when it’s starting to cook, add the can of chipotle chiles. Cook until the bacon is fully done.
  • Add the can of mixed vegetables, and cook for 5 minutes. Season with salt and pepper.
  • To make the rolls, have a little water in a bowl handy. Extend each wonton diagonally (like a diamond), and place 1 tsp of the mixture in the center of each wonton. Fold one corner in to the wrap the filling. Then fold both sides in so that the filling doesn’t fall out, and roll the rest.
  • In a frying pan, add Ahuacatlan Oil Natural. When hot, fry the egg rolls until golden brown.

Avocado-Jalapeño Dip with Nachos

  • In a bowl place the pulp of the avocados. Smash it with a fork until it has paste consistency. Add lime juice, Ahuacatlan Chipotle, cilantro, jalapeño and mix together well.
  • In a blender, blend the mixture and add the cream cheese until homogeneous. Season with salt.
  • Serve in a bowl decorate with pickled jalapeños, and accompany with your favorite brand of nachos.

Serrano Ham & Avocado Tapas

  • Slice the French baguette in 1-inch slices
  • In a sauté pan, heat up Ahuacatlan Natural and sear the bread slices on each side. Reserve.
  • In a bowl, add the pulp of the avocados, smash them with a fork, add the Ahuacatlan Chipotle, the lime juice, the jalapeño pepper, the garlic clove, and season with salt and pepper. Reserve.
  • Assemble the tapas by adding the avocado paste to the bread, then add a few slices of tomato, then the Serrano ham and top with fresh cheese.
