  • Preheat oven to 400°F.
  • To prepare salsa verde, add parsley, basil, scallions, garlic, and mustard to food processor.  Pulse to combine. Add lemon juice, water and stream in Ahuacatlan Avocado Oil Garlic while running. Season with salt and pepper to taste.  Set aside.
  • Season steak generously with kosher salt and pepper on both sides.  Heat a large cast-iron skillet over high heat.  Add Ahuacatlan Avocado Oil and heat.  Add steak to pan, and sear for 4-5 minutes.  Flip, and place into oven for 6-10 minutes, or until cooked to desired doneness.
  •  Place steak onto cutting board, cover loosely, and let rest for 10 minutes.
  • Slice steak, against the grain, to ¼ inch thickness.  Serve with salsa verde.

Baked Pork Pibil (Yucatan Style)

  • In a blender add water, orange juice, apple vinegar, achiote, onion, garlic, oregano, cumin, pepper and salt. Blend until homogenous.
  • In a large, non-reactive bowl put the pork and marinate with the achiote sauce for 4 hours.
  • Preheat the oven to 375 °F
  • Meanwhile, in a baking Pyrex, lay out the banana leaf and wash with Ahuacatlán oil. When the meat is ready arrange the meat over a few of the leaves and cover with the rest of the leaves.
  • Bake for 30 minutes.
  • Remove the banana leafs and serve immediately.

Steak and Pineapple Skewer

  • In a non-reactive bowl add the skirt steak, Ahuacatlán oil, red wine, garlic, oregano, black pepper and salt. Marinate for 1-2 hours in the refrigerator.
  • Assemble the skewers alternating steak, onion and pineapple.
  • Once ready, grill the brochettes for 5 minutes on both sides, or until obtaining the desired doneness.

Ham and Goat Cheese Filet Mignon

  • Preheat the oven to 375°F.
  • In a a sauté pan, heat up the Ahuacatlán oil, add onion and sautee until translucent. Then add the tomato pure, and simmer for 4 minutes. Add sour cream and season with salt and pepper.
  • To assemble the filets, wrap the Serrano ham around each filet.
  • Spread the puff pastry and add a spoonful of the sauce, then the filet, and lastly add a few chunks of the goat cheese. Wrap the puff pastry close.
  • Arrange the puff pastry on a sheet tray, and varnish with egg wash.
  • Bake at 375°F for 40 minutes or until the puff pastry is golden brown.

Ground Beef Empanadas

  • In a sautee pan, add 1 tablespoon Ahuacatlán Natural, and sautee the ground beef until fully cooked, about 20 minutes
  • Add the red-hot sauce, onion, scallions, garlic, ginger, black pepper, and 1 tablespoon Ahuacatlán Natural and simmer until the ingredients come together.
  • Add a spoonful of the beef filling to each empanada disk and seal the edge with egg wash.
  • In a frying pan, add a good amount of Ahuacatlán Oil to fry the empanadas. Fry until golden brown (or about 10 minutes), and pat dry with a paper towel to remove the excess.

Drunken Ribs (Beer Marinated Pork Ribs)

  • Preheat the oven to 400°F.
  • In a saucepan, heat up 1 tablespoon Ahuacatlán natural, then add onion, garlic, paprika, chorizo and bacon, and cook until the meat releases some juices. Remove the meat and reserve the juices.
  • In the same pan, heat up 1 tablespoon Ahuacatlán, add onion powder, Worcestershire sauce, mustard, Morita chile, and tomatoes. Cook for 5 minutes and add the beer. Simmer until all the ingredients have blended in and form a sauce.
  • Marinate the ribs in the beer sauce for 30 minutes. Place in a baking sheet covering the ribs with pineapple slices. Bake for 1 hour or until the ribs have fully cooked.

Bacon Meatballs with BBQ

  • Preheat the oven to 350°F.
  • In a large bowl mix together ground beef, hot dog, bread crumbs, onion, garlic and egg.
  • With the palm of your hands, form meatballs the size of a golf ball. Insert a small piece of mozzarella cheese in the center.
  • Wrap each ball around with bacon and hold the bacon with a toothpick.
  • Place the meatballs on a baking sheet and cover with foil. Bake for 20 minutes or until crispy.
  • Take out and add an abundant amount of your favorite BBQ sauce. Make sure to cover the balls fully. Bake for 5 minutes.

Rib eye with paprika

  • Preheat the oven to 400F.
  • Season the meat with Knorr on both sides. Add paprika, black pepper, and garlic powder on one side and let sit for 15 minutes.
  • Heat up a cast iron grill pan, add Ahuacatlán Oil Natural, sear the meat on both sides and finish the meat in the oven.

PARMESAN AND HERB-CRUSTED BEEF TENDERLOIN

  • Preheat the oven to 435° In a large heavy-gauge baking sheet, rub the tenderloin with Natural Ahuacatlán Avocado Oil and season with salt and freshly-cracked pepper.  Cook for approximately 20 minutes
  • While the meat is cooking, in a medium-sized bowl, mix together the breadcrumbs, fresh Parmesan cheese, anchovies, garlic, thyme and parsley. Add 2 tablespoons of Natural Ahuacatlán Avocado Oil, salt and pepper to taste
  • Remove the tenderloin from the oven and lower the temperature to 400° Pack the herb and parmesan mixture over the meat and bake for 30 more minutes
  • In a saucepan over medium-high heat, add the tenderloin drippings, red wine, 2 tablespoons Onion Ahuacatlán Avocado Oil and beef broth. Bring to a boil, stirring constantly until thickened
  • To serve, slice the meat and plate with the red wine sauce

ORANGE MARINATED PORK TENDERLOIN

  • Place the meat on an extended plate and season all over with 1 tablespoon powdered chicken broth, salt and pepper
  • Heat the Natural Ahuacatlán Avocado Oil over medium heat and seal both sides of the tenderloin until golden
  • In a blender combine together the orange juice, whole chipotle chile pepper, onion, 2 tablespoons of powdered chicken broth and 2 tablespoons Chipotle Ahuacatlán Avocado Oil
  • Place the meat in a large pot with the orange and chipotle sauce. Let cook for 30 mins at low heat, turning meat constantly
  • Slice and serve accompanied by a side of green salad
